Sweet AND Hot Chowder

Corn and Potato Chowder:

Heat a bit of oil in a stock pot and add 2 diced yellow onions. Add 3 slices of bacon (optional). Cook for 10-15 minutes over medium heat until they are translucent. Add 1 leek, thinly sliced. Add 1 jalapeno pepper thinly sliced (or more than one- it's up to you).

Add two cans of corn. Continue to cook for 10 more minutes. Add 2 cans of creamed corn and 6 small red potatoes. Add 1/2 cup milk or more until you get the consistency you want. The milk should help cover the potatoes. Stir in 1 teaspoon cumin, 1/4 teaspoon chili powder, 1/4 teaspoon white pepper and 1 1/2 teaspoons thyme.


Cover and simmer on low heat until potatoes are cooked through, about 30 minutes.



The resulting chowder is corn-sweet but with a nice little kick...and the eggs!

Hello!! Welcome. I forgot to mention that we aren't eating the chowder until tomorrow- I took advantage of the bad weather to cook today. I did have a taste and it was tasty.

Yum! Corn chowder sounds delicious! You know I think comfort food is the best, so you do not need to step it up as far as I am concerned - your stuff looks delicious! :)

I have eclectic taste so you never know what we'll be cooking up next. I also welcome any and all constructive criticism, I am a first time blogger and this is most definitely a work in progress.

I am making this tonight! I bought the ingredients yesterday. I found these tiny red potatoes - it was so exciting- any advice not on the blog?- JB

JB- Just add enough milk to cover the potatoes and don't be afraid to play around with the recipe- I added some 3/4 of the way cooked bacon for flavor and let that simmer in the chowder as it cooked. Good luck :) and let me know how it goes!

I added 3 pieces of chopped bacon in with the onions at the start so everything cooked in that good bacon "juice" - I also waiting a bit longer untill adding any other ingredients. I waiting until the bacon was a little crispy and the onions were just starting to turn a little brown. I figured this would only add more flavor. I also added some heavy cream with the milk to make it richer and right before I served it I melted 3/4 a stick of butter into the soup. Since the batch looked big to me I added a bit more of all the spices. It turned out really great!!

I forgot - I had no leaks so I omited them from the chowder. I didn't miss them.
